Hi everyone, since Turkey day is around the corner, I thought that this
would be an appropriate time for ...
Turkey Corn Casserole
3 cups cooked corkscrew pasta, ( 2 1/2 cups uncooked)
1 cup shredded Monterey Jack cheese w/ Jalapeno peppers, divided
1 can condensed cream of chicken soup, (10 3/4 oz.)
1/2 cups sour cream
1 tsp chili powder
1/8 tsp garlic powder
1 can whole kernel corn, (8 oz.)
1/2 cup chopped green onions
1 1/2 cups shredded cooked turkey
1 1/2 cups chopped tomato
1 1/2 cups chopped pitted ripe olives
sliced green onion for garnish
In greased 12"x8" baking dish, combine pasta and 1/2 cup of the
cheese. In medium bowl, combine soup, sour cream, chilli powder,
garlic powder, corn, green onion and turkey. Spread evenly over pasta
mixture. Bake at 350 degrees fahrenheit for 30 min. Top with
remaining cheese. Bake 5 min. more. Garnish with remaining
ingredients and crumbled tortilla chips if desired.
